Best Ever Healthy Potato Chips

Ok so who doesn’t LOVE potato Chips… and who wouldn’t LOVE to eat them and feel good about themselves…. rhetorical questions here!!!

The idea for these fabulous potato chips were given to me by my fabulous niece… you know who you are Melissa đŸ˜‰

Here the deal with the most amazing potato chips ever…


  • Peelings from at least 6 medium sized potatoes
  • Spices (salt, pepper, onion powder, garlic powder, paprika)
  • 2 Tblsp of Nutritional Yeast
  • 2 Tblsp of Coconut oil


  • mix the potato peelings with all the spices and yeast
  • Place the coconut oil in a frying pan
  • Once the oil is melted, place all the seasoned peelings into the pan
  • Fry until crispy
  • and ENJOY….

There are many benefits to many of the ingredients listed. Coconut oil has a bunch of great health properties and so does nutritional yeast.

These are great to snack on or as a side dish to any meal.

Roasted Medley….

Whenever I can I try to eat a vegetarian, organic and locally purchased diet. I also attempt to fabricate recipes that will satisfy an array of child taste buds but also appeal to my own

This recipe is an easy one…


4 yellow organic potatoes
1 large organic sweet potatoe
1/4 of an organic onion cut into large pieces
4 mini random coloured pepers
2 Tblsp extra virgin olive oil
Salt, spices, onion powder, and a sprinkle of Parmesan cheese

Cut potatoes to whatever size you want. Toss in a bowl with all the ingredients. Lay over parchment paper on a baking tray. Put into a preheated oven 350 Degrees and roast or bake for about 40 minutes (depending on the size of potatoes you cut).

Then enjoy….. yummmmmm
